We start with the cover and, for this, in a deep bowl we put the flour and add the butter, 60 grams of sugar (we reserve the rest for the red fruits) and the oat flakes. Mix with the fingertips until you get a kind of crumbs. We spread on a baking sheet and cook at 190 for 10 minutes or until it is crispy, stirring at medium cooking so that it browns equally on all sides.
While the cover is in the oven we prepare the crumble base. We wash the red fruits and dry them well. We introduce the fruit in a casserole, add the remaining 30 grams of sugar, white wine and fine cornmeal. We cook over medium heat for a couple of minutes or until the fruits do not release more juices.
We pass the fruits to a baking dish and cover them with the cover. Cook again in the oven at 190ºC for 10 more minutes or until the coverage is slightly golden. We serve hot or warm, although cold is also delicious. We can accompany it with English cream, a splash of liquid cream or a scoop of vanilla ice cream.
