How to make fig jam without sugar: healthy recipe to enjoy the purest taste of fruit

Wash and dry the figs very delicately, which should be very ripe but not passed. Peel carefully of having a thick layer. We can also leave it, although it is less sweet. Weigh about 500 g of peeled figs.

Place in a saucepan or casserole not very large, add the lemon juice and crush them a little with a wooden ladle or tongue. Light the fire and heat at medium temperature while continuing to crush. Add Modena vinegar, if desired.

Figs should have already released their juices; If not, add a splash of water. Cook over low heat for about 20 minutes until the fruit is undone and thickened. Remove, add chia seeds and stir well. Let cool; Chia will thicken the figs giving it the texture of jam.

Once cold, store the unsweetened fig jam in clean, tightly sealed jars, and store in the fridge, or freeze.
