In this case we have employed green figs, less showy in color than purples, but which are usually tastier and sweeter. This recipe with no added sugar has a shorter shelf life that of the usual jams, precisely because sugar is a preservative; That's why we recommend not to do a lot of blow. For 4 units- Figs (heavy and peeled) 500 g
- 5 ml lemon juice
- Modena Vinegar (optional) 10 ml
- Chia seeds 10 g
How to make sugar-free fig jam

Wash and dry the figs very delicately, which should be very ripe but not passed. Peel carefully of having a thick layer. We can also leave it, although it is less sweet. Weigh about 500 g of peeled figs.
Place in a saucepan or casserole not very large, add the lemon juice and crush them a little with a wooden ladle or tongue. Light the fire and heat at medium temperature while continuing to crush. Add Modena vinegar, if desired.
Figs should have already released their juices; If not, add a splash of water. Cook over low heat for about 20 minutes until the fruit is undone and thickened. Remove, add chia seeds and stir well. Let cool; Chia will thicken the figs giving it the texture of jam.

With what to accompany the jam of figs without sugar
Once cold, store the unsweetened fig jam in clean, tightly sealed jars, and store in the fridge, or freeze. Naturally sweet, the pure taste of the fruit of this preparation is perfect to take in sweet or savory preparations.
